Easy and Delicious Breakfast Recipe. Make it in bulk and freeze for quick breakfasts!
Ingredients: – Serves 36
- 12 egg whites, lightly beaten
- 6 eggs, lightly beaten
- 3 large potatoes, chopped finely
- 1 teaspoon Salt
- 1 clove garlic, minced
- 1 c Shredded Mozzarella
- 2 Tbs butter
- Cooking spray
Mix ins:
- 3/4 c Feta, 1 c Tomato diced
- 2 c Chopped Ham
- 3/4 c Feta, 1 1/2 cup chopped spinach
Instructions:
- Preheat oven to 375 degrees.
- Spray Muffin tin with cooking spray.
- Boil potatoes until just tender. (about 6-8 minutes)
- In a frying pan over medium- high heat, saute garlic, salt and boiled potatoes potatoes until potatoes start to brown.
- In a large bowl mix together egg whites, eggs, potato-garlic mixture and mozzarella. (and any mix ins you may desire)
- Fill each muffin tin 1/2 way with egg mixture.
- Place muffin tin in oven for 15-16 minutes, or until eggs are set.
- Serve and enjoy!
