Mini Frittata Recipe (Bulk)

Easy and Delicious Breakfast Recipe. Make it in bulk and freeze for quick breakfasts!

 Ingredients: Serves 36

  • 12 egg whites, lightly beaten
  • 6 eggs, lightly beaten
  • 3 large potatoes, chopped finely
  • 1 teaspoon Salt
  • 1 clove garlic, minced
  • 1 c Shredded Mozzarella
  • 2 Tbs butter
  • Cooking spray


Mix ins:


  • 3/4 c Feta, 1 c Tomato diced
  • 2 c Chopped Ham
  • 3/4 c Feta, 1 1/2  cup chopped spinach

Instructions:



  1. Preheat oven to 375 degrees.
  2. Spray Muffin tin with cooking spray.
  3. Boil potatoes until just tender. (about 6-8 minutes)
  4. In a frying pan over medium- high heat, saute garlic, salt and boiled potatoes potatoes until potatoes start to brown.
  5. In a large bowl mix together egg whites, eggs, potato-garlic mixture and mozzarella. (and any mix ins you may desire)
  6. Fill each muffin tin 1/2 way with egg mixture.
  7. Place muffin tin in oven for 15-16 minutes, or until eggs are set.
  8. Serve and enjoy!
